Jamaican Beef Patties

For the Crust:
- 2 ½ cups all-purpose flour
- 1 tsp turmeric for color
- 1 tsp curry powder
- 1 tsp salt
- ½ cup cold butter cubed
- ¼ cup cold shortening
- 6-8 tbsp ice water
For the Filling:
- 1 lb ground beef 80/20 fat ratio
- 1 small onion diced
- 2 garlic cloves minced
- 1 Scotch bonnet pepper finely chopped (remove seeds for less heat)
- 1 tsp thyme
- 1 tsp allspice
- 1 tbsp Jamaican curry powder
- 1 beef bouillon cube
- ½ cup breadcrumbs optional
- ¼ cup beef broth
1️⃣ Make Dough:
Whisk flour, turmeric, curry powder, and salt. Cut in butter/shortening until crumbly.
Add ice water 1 tbsp at a time until dough forms. Chill 30 mins.
2️⃣ Cook Filling:
Brown beef in skillet. Drain fat, then add onions, garlic, and Scotch bonnet.
Stir in spices and broth. Simmer 15 mins until thickened. Cool completely.
3️⃣ Assemble:
Roll dough to ⅛" thickness. Cut into 6" circles.
Add 2 tbsp filling to each, fold, and crimp edges with a fork.

Freezer-Friendly: Freeze unbaked patties for up to 3 months. Bake from frozen (+5 mins).
